Sounds yummy, but how can you make it vegetarian and still get the smoky flavor of the bacon?

Yeah, wonderful combo. I like the brussels steamed first before the skillet rather than baked...lol, not sure why. So much that can be done with this recipe according to mood - it's totally buildable and I like commenters suggestions. I added grape tomatoes (whole) last time I made this.

This recipe is so good I have made it 3 times (and have recommended it to friends) and will be having it with pork tenderloin on Sunday. I never liked Brussels sprouts until I made these. The apples (I use Granny Smith) and the bacon give it so much flavor and if you cook it for less time than recommended it is all a little firm to the bite. Wonderful Wonderful!

I made this according to their recipe and it was so so. The vegetables were overcooked and mushy. The flavor was rather flat. I did a few things differently the next time. I put the brussels sprouts in the oven by themselves. I cut up two apples and half an onion and sauteed them in the bacon grease. I added some cinnamon, nutmeg, raw sugar, and 1/4 cup golden raisins. I cut up the brussels sprouts and added them to the apple/onion mixture before serving. It was delicious.

This was very good and will be making again. I did add a few mushrooms to it. I can never leave a recipe alone lol. boyfriend loved it too. There was no left overs for tomorrows dinner.
