Think you have nothing for dinner tonight? Think again.

"I don't know about you, but I tend to have great planned meals at the beginning of the week - and by Thursday, I have no clear plan and few fresh ingredients. I don't always have time to stop at the store after work, but luckily, I have a well-edited pantry of staples that provides me with many paths to delicious dinners."

My Supper Staples:

  • Cured meat like bacon, salami, or sausage
  • Onions and garlic
  • Parmesan and cheddar
  • Olive oil
  • Dried or canned beans
  • Olives and capers
  • Rice and grains
  • Canned anchovies
  • Tuna and sardines
  • Chicken broth
  • Canned tomatoes
  • Eggs
  • Frozen vegetables, such as peas, corn, and spinach
  • Pasta

Here are some go-to pantry meal ideas.

Lentils with Sausages
Cook lentils as in Lentils with Eggs and Greens. Sauté sliced onions and apples. Serve onions, apples and sausages over lentils.

Tomato Soup
Sauté a diced onioin and a few minced garlic cloves; add a large can of whole peeled tomatoes, crushed and a can of chicken broth. Simmer 10 minutes, then purée.

Pasta Puttanesca
Sauté garlic, red-pepper flakes, and an anchovy or two in olive oil. Add some capers and black olives and a large can of whole peeled tomatoes, crushed. Heat through and toss with pasta.
