I didn't have all the ingredients or fresh herbs. I had just a little butter, so I added a bit of olive oil. I had dried rosemary and thyme so I used half the amounts, and doubled the fresh garlic. I didn't have shallots or parsley. ...And it still came out delicious!

I really liked this recipe. It was easy to follow and prepare. Spaghetti Squash needs lots of flavor and this recipe has it. I added additional shaved Locatelli cheese on top. It was delicious with my pecan crusted chicken and broccollini with crispy shallots. I will use chopped anchovies and cut Kalamata olives for a twist next time.

Wowee, this was easy, delicious and wholesome!!! I made pork chops with Mediterranean spices and tabouli with this. My husband and I loved the whole meal.

Up until now, my favorite way to eat spaghetti squash was with marinara sauce. This recipe was easy and so delicious - I now have a new favorite way to eat squash. I didn't have Rosemary on hand so I only used Thyme and it was still delicious. The Parmesan cheese adds that perfect touch too.
