Crack open an egg and all sorts of magic can happen. Since they're so versatile, these protein-packed ingredients conjures up satisfying meals any time of the day. What's more, an egg is the type of ingredient that can be the centerpiece to a meal or one that ties multiple parts together. And they're a great option for any household, as eggs are as easy to cook for one as they are for a crowd depending on your recipe selection.

With endless innovative preparations, it's hard to get bored of eggs. Sure, the classics, like omelets, fried eggs, and such, never fail, but the key to turning eggs into a crave-worthy meal is to look just beyond the basics, updating these preparations with tasty twists. A thin omelet becomes an extraordinary meal when sliced into fettuccini-style noodles in our Egg "Noodle," Broccolini, and Mushroom Stir-Fry recipe. Adding a small handful of Parmesan to the skillet before frying an egg transforms this basic preparation into an extra crispy frico-crusted main once paired with a green salad in our recipe for Parmesan Fried Eggs with Bitter Greens. 

Quiches and frittatas are synonymous with serving crowds, but these filling preparations also play particularly well for meal prep or prepared breakfasts on the go. A particularly fun way to enjoy a frittata is to sandwich it between two slices of bread for the ultimate egg sandwich, just like we do in our Frittata-Hash Sandwich. Other spins included tossing in grains, like rye in our Swiss-Chard Frittata with Rye Berries recipe, or updating a quiche crust by using potatoes as the crust for a tasty gluten-free option, as we do in our Potato-Crusted Herb Quiche.

Bull's-eye eggs, the classic childhood breakfast, meet avocado toast, the classic adult one. Cut out a round from a slice of bread. Place the holed-out bread (and the "hole") in a buttered pan, drop in an egg, cover, and cook for a minute or two. The lightly mashed avocado adds fiber and good fats (how adult of you), as well as extra fuel for your day.

This is our take on the traditional Turkish breakfast called cilbir. It's no wonder the dish has endured: It's a luscious combination of a gently poached egg, garlicky strained yogurt, and smoky-hot infused butter. (This recipe usually gets its heat from the Aleppo chile pepper, but we used cayenne and paprika.) Garnish with chive blossoms, and serve with crusty bread to sop up every last bit.

For an elevated yet easy individualized breakfast, butter small ramekins, then crack in eggs and a spoonful of cream. While there are many techniques for super creamy and fluffy scrambled eggs, we say that it's best to take your time and to not be afraid of butter. Once your eggs are ready, pile them into tartlets made from rye bread that's been flattened slightly, brushed with (more) butter, and baked. Serve with a toppings bar of crumbled bacon and radish sprouts.

This is a fun dish to make: When you drop beaten eggs into hot oil, they instantly puff up like a life raft and become crispy, fluffy, and ready to eat in less than a minute. To make the recipe hearty enough for dinner, we added snap peas and shrimp to the batter, and served the dish with white rice, plus scallions and spicy chili sauce on top.
