25 Summer Fruit Pie and Tart Recipes That Are Bursting with Seasonal Flavor

One of the best parts of summer is the abundance of juicy berries—think blueberries, strawberries, raspberries, and blackberries—and stone fruits like peaches, plums, nectarines, and apricots. While these fruits are delicious eaten out of hand fresh from an orchard or farmers' market, they're even more spectacular when tossed with sugar, lemon juice, and a little cornstarch and baked between two layers of flaky pie crust. Our summer fruit pie and tart recipes highlight the very best of the season's produce.

On hot summer days, it may be hard to imagine turning on the oven and baking. That's why we've included several no-bake, freezer-friendly pies. Start with our Peach Chiffon Pie, which uses two pounds of chopped fresh peaches; it only takes half an hour to prepare, but needs to chill for at least four hours so it's the perfect make-ahead dessert for your next family dinner. Or try our light and bright Strawberry-Lemonade Icebox Pie; it's just the thing we want to enjoy a slice of after a long day spent in the sun.

Other summer fruit pies and tarts make use of store-bought puff pastry to get you to dessert faster. Use the flaky puff pastry as the frame for an ombré arrangement of slices of different types of plums, as in our Plum Tart. Or let the frozen puff pastry be the crust for hand pies made with a filling of sweet cherries and cream cheese.

Don't forget about oh-so-easy freeform galettes—no pie dish needed, just a baking sheet. We've got recipes for an Apricot-and-Strawberry Galette and a Plum Blackberry Galette, because if there is anything better than a summer fruit pie or tart made with the choicest berries or stone fruits, it's one made with both berries and stone fruits!

This gorgeous strawberry, cream, and meringue confection resembles a pavlova, but the meringue base omits vinegar and cornstarch and is baked in a pie dish so it sets into a pretty shell. The filling is  quick-cooked strawberries with some gelatin; a generous pour of lemon juice, whipped cream, and fresh berries finish it off.
