One&Only Palmilla, Los Cabos, Mexico

The memory of last year's Hurricane Odile remains—but many damaged hotels are emerging even better than ever. One such property is the One&Only Palmilla, which has been completely rebuilt. Expect ocean-view guestrooms with private decks, personal butler service, and a new steakhouse from chef Jean-Georges Vongerichten. (In other One&Only news, the Ocean Club in the Bahamas recently underwent a facelift, including expanded guest rooms and a new beachfront infinity pool.)

Las Catalinas, Guanacaste, Costa Rica

Admittedly, this is more of an entire beach town than a single hotel—but it's an exciting project all the same, complete with a Beach Club (opening in December), shops, restaurants, and a variety of hiking, biking, and horseback trails. Honeymooners can get in on the action by renting one of the many residences, including this beach-chic one-bedroom apartment. Come next year, there will be two boutique hotels to choose from.

The first all-new hotel to open since the hurricane is also the first Mexico property for the Thompson Hotel group. (The 161-room property's rooftop bar is another first—and only—for the area.) Other highlights include a restaurant from Mexico City's famed Enrique Olvera, two pools, a spa with ocean-view cabanas, and guestrooms with private balconies.

Guadalajara—Mexico's second-largest city—may not be the first place that comes to mind when planning a honeymoon, but it's worth a short visit for a stay at the latest project from Grupo Habita. Design buffs will especially love the 37-room property, with its stylish interiors designed by Italian firm Dimorestudio and location right in the main art district.
