Pretty in Pink: Wedding Cakes and Desserts

This one-of-a-kind cake is ideal for a beach wedding. The lemon-flavored cookie-like tea cakes are tied around buttercream tiers with gold ribbon -- every other one finished with a bow.
Using dozens of gum-paste flowers in an abundant cascade is a classic, opulent way to display them on a wedding cake. A variety of orchids with the depth and detail of the real flowers flows downward from the top tier. Pale-pink fondant forms a soft backdrop.
Fauchon's monogrammed pink pastry boxes, or boites roses, are interpreted in tinted white chocolate; the cake itself is vanilla sponge with strawberry syrup and mousse. Almond macaroons in raspberry, chocolate, pistachio, and passion fruit are piled on and around the tiers.
This red, white, and pink confection would be perfect at a snowy winter wedding. We displayed our whimsical cake among an enchanted forest of peppermint topiaries.
The French Confection
A majestic design turns a bit coquettish when it's festooned with macaroons -- the quintessential French treats -- and dressed up in flirty pink. Homemade marshmallows cut into rounds echo the shape of the raspberry macaroons, as does the pattern on the fondant.
Three square tiers, draped in pale-pink fondant, are embellished with a sparkling array of trims and ribbons. This is an easy, inexpensive way to turn a plain cake into a gilded confection. The topper is made of three nesting boxes, each edged in gold ribbon, tied up like a parcel from an elegant boutique.
Simple designs, like the luscious buttercream blooms atop these tiny cakes, can make a big impression. Just 3 inches high, these beauties could be the highlight of a dessert buffet or be served at each place.
Quince and Chocolate
In Bermuda, couples top their wedding cakes with tiny saplings, which they plant to grow as their marriages do. Here, a milk-chocolate figurine, formed in a replica of a 1920s mold, stands on a faux top tier of Styrofoam coated to match the cake. The flowering quince branches above were painted with chocolate (choose pesticide-free foliage). The rolled fondant is tinted pink to pick up the hue of the quince.

Roses are arranged between buttercream tiers piped in a basket-weave pattern to resemble wicker -- what could be better for a summer garden wedding? Atop the cake, a ceramic pot (with no hole in the bottom) is overflowing with roses anchored in floral foam.
Brimming with Beauty
The scale and shape of this cake suggest a gorgeous Victorian hat, so it's appropriate that the decorations adorning it are millinery flowers -- fabric blossoms that are traditionally used by hatmakers. Kromer's royal-icing string work, a stenciled top, and icing flocked with shimmery sanding sugar all add to the romantic feel. Favor boxes, by Denise Sharp, ornamented with fabric calla lilies are covered in custom paper.

Fluffy Carnation Frills
A four-tier cake covered in pink fondant celebrates the beauty of carnations. Hundreds of them blanket the simple wooden box it rests on, an idea that works well with carnations because they are so affordable.
A garden of roses in pink, peach, and yellow encircles a full-size cake. The flowers' variegated look is achieved by placing two colors of icing side by side in the pastry bag. As on the mini cakes, rows of dots are piped in the same buttercream that covers the tiers.
The sweet, shimmery details of lustreware plates were typically painted in silver, copper, and pink. The playful motifs encircling the tops of the four tiers of this cake were created with powdered food coloring and a sable paintbrush.
