Two Bakers Share How to Use Your Favorite Pie Flavor as Wedding Cake Inspiration
Pie-inspired cakes are the perfect dessert for a wedding taking place during the holiday season!
As the weather cools and the holidays grow closer, there's nothing quite like ending a meal with a warm slice of pie. So, when it comes time to choose a dessert for your fall wedding, why not take this seasonal tradition one step further and surprise your guests with a pie-flavored wedding cake? Here, a few bakers share how the flavors in your favorite pie can come together as the ultimate big-day dessert.
Classic apple pie is an American favorite, but instead of serving standard slices, Bronwyn Linley of Bobbette & Belle recommends wowing your loved ones with its flavors in cake form. She says to go with tiers of vanilla sponge cake layered with thinly sliced apple and tart, fragrant quince, which is often used to make jellies and preserves. To ensure your confection reminds everyone of traditional apple pie, Linley says to cover the cake in a thick coating of rich vanilla icing infused with a touch of bourbon and fall spices, like ginger, cinnamon, nutmeg, and allspice.
A classic found on nearly every Thanksgiving table, there's a way to make this seasonal favorite part of your wedding menu. If you want to remind your guests of holidays spent with family and friends, serve a pumpkin spiced layer cake during dessert. Linley recommends icing yours with maple buttercream frosting and garnishing it with roasted pepitas for flavor and style.
Bourbon Pecan Pie
Pecan pie is a holiday mainstay, but bourbon pecan pie is even better. Jennifer Cella Williams of Beverly's Bakery says you can bring the flavors of this boozy favorite into your wedding cake with ease. She likes to work with an angel food cake that's been lightly spritzed with bourbon, then layer in candied pecans and vanilla pastry cream. Top everything off with bourbon whipped cream and candied pecans for the ultimate pie-inspired dessert.
Banana Cream Pie
To transform a traditional banana cream pie into a fall wedding dessert, Williams says to add a healthy dose of caramel to this otherwise summery treat. Why? Because caramel is everywhere during this season-on everything from apples to candy-so it makes sense that it would be part of your autumnal cake, too. She likes banana cake layered with salted caramel cream and fresh bananas, then finished with French buttercream. To make your dessert especially decadent, drizzle it with a trendy caramel drip.
Spiced Pear Pie
Pears are another popular fall fruit, and when combined with seasonal spices, they make for a softer, more delicate dessert. Bring this pie's traditional flavors alive in your cake by serving a maple and brown butter cake layered with thinly sliced pears, says Linley. Ice it with vanilla bean buttercream for the perfect treat.
Cranberry Pistachio Pie
Mixing this quintessential fall fruit with the nut of the season means you've got a great flavor combination on your hands. Take it from pie to cake by using pistachio cake layers filled with cream cheese and cranberry compote, says Williams. An orange-infused buttercream garnished with sugared cranberries and orange zest can finish it off.
