Where: The Big Island

The chefs at 'Ulu Ocean Grill at the Four Seasons partnered with 160 farmers and fishermen to up their local-food game, offering super-fresh sashimi and passion-fruit-glazed boar. But all that's incidental to the drama of a fiery orb sinking into the hotel's stretch of the Kona-Kohala coast.

Where: Maui

Known for serving some of the best seafood on Maui (and that's saying something), Mama's Fish House, in Paia, is completely of the islands, from its Molokai pink-salt-topped ono sashimi down to its thatched-roof, open-air dining rooms, from which you can see the sun descending over the waves of the island's North Shore.

At dusk, any of Waikiki's tiki bars are fine as long as you have a seat near the sand and a cocktail in hand. Still, history buffs will want to hit the Mai Tai Bar, at the Royal Hawaiian Hotel, where Trader Vic poured the first-ever Hawaiian mai tai in 1953.

The top beach property on this untrammeled isle, the 1960s-style Hotel Molokai is very basic—and inexpensive, with kitchenette-equipped, patio-fronted seaside rooms going for as little as $179 a night. At the hotel bar's happy hour, buy a $4 drink (take that, Honolulu!) to bring down to the beach, where you'll see the light disappear behind Maui and Lanai.

Four Seasons Resort Lanai at Manele Bay

Where: Lanai

The bay of the southern-facing Holopoe Beach at Four Seasons Resort Lanai at Manele Bay doesn't have direct sunset views, just dusky pink light. But it does showcase the theatrics of its resident spinner dolphins.
