  • Slowly add extra-virgin olive oil, whisking until emulsified. Or shake the ingredients in a jar, or whirl them in a blender.

Great recipe--been using it since it appeared in Everyday Food in 2003. I like my vinaigrettes with some bite. I advise reducing the oil by 1/4 cup. I throw everything in my blender & process.
