With Latin-inspired flavors of chiles in adobo and fresh cilantro, these lively combinations of tastes, colors, and textures is just as fun to make as it is to eat.

This was really good. I've made it twice. The first time was exactly as the recipe states, we only had trouble getting the meat to stay on the skewers. The second time, I made them into paddies and put them in pita bread with tzaziki sauce, lettuce and tomato. Amazing!
