Lucinda's version of bolognese sauce takes just a third of the time of the original to prepare. Serve it over spaghetti or any pasta you may have in the pantry. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

I first cooked the vegetables in the oil added the tomatoes and blended them. While they were in the blender I cooked the meat. Put it all back into the pot, added cream (used no wine), black pepper and crushed pepper flakes. Put the butter in right before serving, SO GOOD!

I loved this recipe. I really enjoy cooking it and the color of my sauce was beautiful. I went by your recipe exactly. Bon Appetite! Thank you for sharing!

I also followed the recipe exactly and now, after watching the video, see where "add the pancetta and beef" was the wrong thing to do. The pancetta (even after 40 minutes of cooking) never became crispy as there was too much moisture from the other ingredients. In the video Lucinda adds the pancetta FIRST, allows it to get crispy, and then adds the beef. I should have watched the video first. I would suggest making a correction on the recipe to read: Add pancetta and cook until crisp. Then add beef and cook until browned.

think i can leave out the heavy cream? Is it essential to this recipe? I keep kosher so we don't mix dairy and meat

Probably, but the sauce won't be as smooth. In my case I like it because it lessens the chance of heartburn from the rest of the red tomatoes added.

D-lish! I didn't have the pancetta and i used ground turkey. I also used speghetti squash instead of noodles. Everyone loved it! I will be making this my go to meal in my home.

This was SO good. I didn't have the pancetta, but made it with ground sirloin, so I didn't have to drain, which now watching the video, she says not to. But it was still excellent, the kids LOVED it!!

Excellent. I made this with ground dark meat turkey instead of the beef. Came really well.

Very good! I made this tonight after seeing it this morning on the show. I used beef. It came out perfectly and this will definitely become part of my repertoire.
