If your roasting pan only fits sideways in the oven, turn the pan every hour so the turkey cooks and browns evenly.

    I make this every year but for some reason forgot to reduce temp until it had cooked an extra 50 minutes at high temp. Not sure how to adjust time. I covered legs with more cheesecloth and temp is now down to 350 and may change to 325. How can I save this?

    My family has been making this turkey for years but we also brine the turkey in addition to Martha's recipe. The combination of both make a perfect turkey!

    I love this delicious turkey recipe from Martha! I have been making my Thanksgiving turkey this way for at least 10 years and it always turns out great! I brine the turkey with Martha's recipe the day before. It takes a bottle of white wine, but gives the turkey an excellent flavor. I also use her Riesling gravy recipe made with her turkey stock recipe. My family and I always look forward to the fabulous flavors every Thanksgiving! I hope to pass this tradition on to my daughters and the granddaughters! Thanks Martha!

      What are the cooking times for a 10-12 lb unstuffed turkey? I can't seem to find anywhere to ask this question.

      A 10-18 lb unstuffed turkey, according to Butterball, should be cooked at 325 degrees in a shallow pan for approximately 3 to 3 1/2 hours, which is a pretty wide range of time, so I would watch it and test for doneness using the meat thermometer as directed above in Martha's recipe.

      Hi this is my first time cooking a turkey, if i do not stuff the turkey the cooking time is the same or less thank you i would like to do this recipe.

    I want to use this recipe today, but have no cheesecloth. Does anyone have a good alternative that works in the oven?

      Not positive but possibly a flour sack towel. Make sure to keep it moist every 30 min to prevent burning. I use a cheese cloth but I've made this turkey for a few years now, I use chicken broth, wine and 1 stick of butter in my baisting sauce. Good luck.

    I tried this recipe this Thanksgiving. Absolutely the best, juiciest, moist turkey I have ever made. I did add turkey stock around bird and placed celery, garlic, carrots and onions in the pan as well. It made a delicious gravy. Wow, the cloth protected the bird and once uncovered after hour three, the bird browned up nicely with a crunchy skin!! A must from now on!!
