You can also try the mint syrup (step 1) to sweeten iced tea or lemonade. For a bracing cocktail, add a splash to a glass filled with seltzer, vodka, and lemon.

    Absolutely fantastic and EASY recipe! The hint of mint is a wonderful addition and makes this an even more summer-esque dessert. I added all the syrup I yielded (~ 1/4 cup). Perfect for my version of breakfast at Wimbledon :)

    I would like to know how you end up with One Cup of syrup when you only started out with 2 tbsp of water and only a 1/4 cup of sugar which you bring to a boil (which will take even more volume away). The mint leaves are not going to extract that much juice. Can someone please explain? It seems to me only a very small amt. of syrup would be left and certainly not a full cup! Thx! :)

      I noted in this recipe that the syrup results in 1/4 cup, not 1 cup.
