Coconut milk is a magical ingredient: It transforms basmati or jasmine rice with its wonderful flavor and aroma. To make this easy side dish, all you'll need is a can of light coconut milk, rice, and salt—chopped scallion is an optional garnish. Be sure to rinse the rice in cold water before cooking to remove excess starch and prevent the rice from becoming gummy.

Ingredients

  • 2 cups basmati or jasmine rice, rinsed

  • 1 can light coconut milk (13.5 oz)

  • 1 teaspoon salt

  • 1 scallion, thinly sliced

Directions

  1. Rinse the rice in cold water, then strain it in a fine-mesh sieve. Place rice, coconut milk, 1/4 cups water, and salt in a pan with a tight-fitting lid.

  2. Bring to a boil over medium heat. Cover and reduce heat to low to simmer. Cook for 20 minutes.

  3. Fluff rice with a fork and top with scallions to serve.
