I tried this yesterday afternoon. I made 4 of them, each one turning out a little better than the one before. The trick is to get them to be small enough to toss in your mouth in one bite. Also, keep them chilled to help them hold together. The best looking one was with smaller slices of avocado and a smaller bit of cheese.
I decided NOT to serve them though because the goat cheese flavor overpowers the avocado, and they just don't look that great.

I totally agree with the previous comment. The technique described in step 4 is impossible to visualize..... we need either a photo or a much clearer description!
