I took these mashed potatoes to the big Vegan potluck Thanksgiving meal in Rancho Park in Los Angeles last year and they were gone in a flash. I made them with regular russet potatoes, regular salt, and a little less fat and they came out great. I learned elsewhere online to mix a pinch of baking soda into the onions to make them carmelize quickly. I highly recommend this recipe to anyone! You don't need all that butter and cream to make delicious, creamy, satisfying mashed potatoes!
