This is a great recipe for the day after Christmas when you've been eating too much rich food. The couscous is a nice touch. I used vegetable broth and tomato puree left over from another recipe. The flavors are nice and fresh. I wish there were a way to save Martha Stewart recipes like on the New York Times cooking site.

I thought this was flavorless and blah. Won't make again.

Quick and tastes much better than canned, that is, vegetables aren't mushy and flavorless. Took a little longer in my wimpy microwave. Easy to make and seemingly impossible to mess up. Good recipe to use remaining canned or boxed chicken broth. I used frozen green beans b/c fresh are out of season here. Highly recommend using the parsley and good Parmesan cheese. I am never going back to canned minestrone.
