    This was not good at all! It was so dry and had no flavor. I followed the recipe almost exactly but used about 3/4 lb of carrots, because 1 lb. was way too many. My husband gamely ate it but I just couldn't eat it at all. No bueno.

    Just made this for the first time. Will definitely make it again! Perfect one dish meal for a busy weeknight. Tasty and smells so good with the mint and lemon! Yum!

    This looks delicious except for the huge amount of salt. When I make it I will definitely cut down on the salt. That may be part of the reason the last reviewer didn't like the dish. :)

    This meal was so dry and all of the spices combined gave off an unappealing smell. I have no thoughts of how to fix this meal so that it's edible for my family. All 4 of us couldn't get past a couple of bites. We threw it in the trash. Not worth the calories.

    Looks fancy and tastes delicious, but is so easy to make, perfect to serve at your dinner party. A couple of notes though -- the prep time took longer, about an hour, and I had my husband help me with the carrots because we were running short on time. Also, make sure to rinse the raisins before putting them in. Finally, make sure to use the exact size pan specified, I used one with bigger surface area, because that's all I had on hand, and the couscous came out a bit dry, but still very good.

    I use bulgar intead of couscous, it is a bit heartier and I didn't have raisens so I used dried cranberries. Very flavorful!

    I love this recipe so much! My husband completely hated it but he's pretty picky. I seriously could eat this once a week. I forgot the mint but it was still so good and I bet it would be better with the mint.

    very good! i only used 3 carrots but otherwise followed recipe exactly and am very happy with it. quick and easy. 10 minutes and into the oven.

    Absolutely delicious! Easy too, although prep time is much longer than 15 minutes - unless you are a professional chef and can chop a pound of carrots with lightening speed.
