    I've made these using packaged frosting for the filling and then dip them til covered in melted minted chocolate pieces that I picked up at the craft store. They are as good as the mint Girl Scout cookies.

    okay - where does the choc syrup come in play. I like the Nabisco Choc Wafers with whipped cream - recipe on the box - cookies are expensive but well worth making the icebox cake. Tastes better the second day when all the whipped cream softens the choc wafer.

    Wafer cookies are Nabisco Famous Wafer. My great aunt has passed down a recipe that you stack the cookies 3 or 5 cookies high. Whip 1 small carton of heavy whipping cream with 1 cap of vanilla extract (small bottle cap), and powder sugar to taste (we use about 1/4 cup). You stack cookie, whipping, cookie until you have the height you want. It is so easy, but you have to make these a day ahead because the cookie gets soft cake-like. You must refrigerate. At Christmas use Peppermint extract.

    OK, apart from the fact that you can't get chocolate wafers here, this is all clear to me - although as others have pointed out, I think that chocolate and fudge sauce flavourings would be quite similar. If you want a really chocolatey filling, sift in some cocoa powder instead, and then add milk to achieve desired consistency. I've made buttercreams flavoured with fruit cordials - they work well, and provide natural flavouring, and colouring to the filling (cherry was very successful).

    I divided the icing filling into 5ths and added: 1/4 tsp. almond extract and yellow food coloring; 1/4 tsp. mint extract and green food coloring; 1/2 tsp. raspberry extract and pink food coloring; 1/2 tsp. orange extract and orange food coloring; and mixed 1/2 tsp. instant expresso with 1/4 tsp. water. I just chose things I had in the pantry that seemed good, and are they delicious!

    You can also take a large marshmello. Just put one one each cookie, put under broiler for a few minutes, then top with another cookie. It's even better if the second cookie has chocolate spread on it.

    kfowler, I'm right there with you. (By the way, love Food Lion! Publix carries them, too here in SC.) A holiday frozen-favorite for those wafers is to make a cake/log with them. Get a glass bread pan and a pack of chocolate wafers, heavy whipping cream and vanilla. We make our own vanilla whipped cream and start stacking the wafers with the cream in between until we fill the pan. Then we coat the whole thing with more whipped cream and freeze it. YUM!!!

    The chocolate wafer cookies are found in the ice cream condiment section at our grocery store- where the ice cream cones and toppings are located. I live in Wilmington, NC and get them at a store called Food Lion. By the way, the wafers do make a yummy ice cream sandwich. I use them to make another Martha Stewart cookie called chocolate ganache cookie. They're very good but do have to be kept refrigerated.
