All you need is a drizzle of olive oil, chopped red onion, and a couple of bell peppers. Use one red and one yellow pepper for a pop of color on your plate beside grilled or roasted meat, tacos, or a casserole. Ingredients 2 bell peppers, red, yellow, or both 1 tablespoon olive oil ½ small red onion, diced Coarse salt and ground pepper Directions Remove seeds and ribs from peppers; cut lengthwise into strips and halve crosswise. Heat oil in a large nonstick skillet over medium heat. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until peppers are just tender, about 10 minutes. Cook's Notes If you like, you can toss in some fresh chopped herbs, such as basil, dill, or parsley, just before serving. Rate it Print
