Lime Simple Syrup for Summer Margaritas

Use this lime-tinged simple syrup to make Summer Margaritas from chef Rick Bayless.


  • 1 ½ cups granulated sugar

  • 1 ½ cups water

  • 1 tablespoon freshly squeezed lime juice


  1. In a small saucepan, combine sugar, water, and lime juice. Place over medium-high heat and bring to a simmer, stirring constantly, until sugar is dissolved. Remove from heat and let cool. Store in an airtight container, refrigerated, until ready to use, up to 1 week.
