  • Combine broth, 2 cups water, and bay leaf in a large stockpot; bring to a boil.

  • Add escarole; cook, stirring constantly, until wilted, about 15 seconds.

  • Add tortellini; cook until they float to the top, 4 to 5 minutes.

  • Discard bay leaf, and season soup with salt and pepper. To serve, ladle into bowls.

Delicious! Use can use the mini ravioli too. I prefer them because they are smaller and don't dominate the dish. I always use Better Than Bouillon chicken broth paste (no MSG). It is delicious in most all my soups. They also have beef, ham, mushroom and vegetarian broths just to name a few.

Just a note. If you're going to make this recipe, make sure you use FRESH tortellini and not the pasta you can get from the pasta aisle. I did that and it just didn't turn out as nice!

I agree about the tomato. This is one of my favorite simple recipes, but I add a can of spicy tomatoes for a little kick!
