Love the simplicity of this recipe. I made it with Veggie stock instead of water and added Herbs de Provence and a hint of garlic salt then after blending added a tablespoon of cream - delicious!!

I love this soup! It is so simple to make. Sometimes I'll add fresh tarragon or fresh dill. I'll make it on Sunday and bring it to work. I'll have a couple of small servings in a demitasse cup throughout the day. Gives me the energy I need and not filling. I'll have a cup when I make it, but after that, I drink it cold.

I made a few alterations - I used Better than Buillion's Chickenless Broth instead of plain water, and roasted up some cauliflower rather than using a potato. It was delicious!

Easy to make, but bland,I skipped the lemon added two green tomatoes,two garlic cloves and two extra tbsp of butter added chicken bouillon and salt and pepper to taste we love it.

Personal opinion...mild just like celery. Other evals talk about adding types od stuff...this recipe does make a gentle flavor that can be perked up per our taste bods. Is reliable, mild soup. Annie, Fremont, CA

I skipped the salt and added bouillon and smoked bacon! kicked it up a notch, made it less bland!
