The flow of sweet sap from maple trees is a sure sign that spring is around the corner. It also trumpets the arrival at farm stands of high-quality syrup graded by color and clarity: Grade A light amber, Grade A medium amber, and Grade B (which is even darker and stronger in flavor -- but not further subdivided by color).
