With this s'mores cookie recipe, you can enjoy the chocolate-marshmallow-cookie combination you love year round, no campfire necessary. Plus, they're almost a healthy treat; the cookie dough includes oats and whole wheat flour, along with all-purpose flour. Squares of chocolate top each drop cookie before baking, then a marshmallow is added when they come out of the oven. The cookies are finished under the broiler for a gooey, chocolatey treat.

  • Preheat oven to 350 degrees. In a food processor, pulse oats until finely ground. Add flours, cinnamon, baking soda, and salt; pulse to combine. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Beat in egg, scraping down side of bowl. With mixer on low, beat in flour mixture just until combined.

  • Drop dough by tablespoons, 1 inch apart, onto two baking sheets. Top each with a chocolate square. Bake just until lightly golden, 11 to 13 minutes, rotating sheets halfway through. Remove sheets from oven; heat broiler. Top each cookie with a marshmallow. One sheet at a time, broil until marshmallows are lightly browned, 1 to 1 1/2 minutes. Transfer cookies to wire racks to cool.

I cut up the marshmallows and used mini chocolate chips. I mixed those into the batter and skipped the broiler step. Worked great. I did add 1tablespoon honey. Great recipe.

These are relatively easy to make and very tasty. The smell in my house is LOVELY now. I only got 42 instead of 60 each, but they cooked well at 11 minutes.

Oh, yes...and I omitted the cinnamon and added a 1/3 C. of honey to better emulate a graham cracker. Delish!

I made this recipe but subtituted the rolled oats for an additional 1/2 C. of white whole wheat flour and they were beyond amazing! I thought the marshmallows wouldn't taste that great once they cooled but they remainded gooey and the cookie is soft and delicious! They are probably super fun to make with kids, too. If you love s'mores like I do, you will LOVE these cookies!

I whipped these up an hour before a party I had to attend. Pretty easy to make. They were a HUGE hit. My husband asked me why I hadn't ever made them before, AND when will I make them again! They're a little messy/crumbly, but that made them even more s'mores like! I can't wait to make these again to share with more of my friends and family. I love the "healthier" ingredients, like oats and wheat flour!

I made these for the family Christmas get together, and even with all the competition cookie-wise, they got eaten! They are almost too good, they go down really easily! Make these!

Hershey's makes a Smores candy bar which is marshmallow on top of a cookie wafer and covered in chocolate. But it's not nearly the same as a good old-fashioned s'more! I'm excited to try these cookies, though.

I wonder if "thebigsalami" is confusing s'mores with a Skor bar? S'mores are a campfire treat - a roasted marshmallow and piece of a hershey bar sandwiched 2 graham wafers. They're so good everybody wants "s'more"!

I usually only buy Mini Marshmallows. I wonder if I put 4 or 5 and pressed them into a hot cookie...I think that would work. Any thoughts?
