  • In a small bowl, combine mayonnaise, garlic, lemon juice, teaspoon paprika, and hot sauce; season with salt and pepper. Set spicy mayo aside.

  • In a medium bowl, combine breadcrumbs, flour, and remaining 1/2 teaspoon paprika; season with salt and pepper. Add scallops, and toss to coat.

  • In a medium nonstick skillet, heat oil over medium-high. Working in two batches, fry scallops, tossing occasionally, until golden and cooked through, 2 to 3 minutes. Using a slotted spoon, transfer scallops to a paper-towel-lined plate; season with salt.

  • Dividing evenly, spread inside of buns with spicy mayo. Top with a lettuce leaf, then scallops. Serve po boys immediately, with lemon wedges.

So easy. So darn good. We use sea scallops but as written with bay scallops is excellent and good value. Serve with coleslaw ... Soft artisan rolls can easily replace hot dog buns ( but those are easy to get and they work!) Yum. Very cool!

We love this recipe.I make it often in the hot summer months- its easy and healthy. I like to serve it with oven fries, coleslaw and sliced tomatoes. I wish I could buy the buns that can be toasted on sides-- seem to be only available in east and I live pacific NW coast, I have to use regular hot dog buns. I try to toast the insides, but hard to get that perfect toasted touch, but i still make this sandwich often and its very good!

This is a very man friendly meal! My husband LOVED the crunch of the scallops. The only change I would make would be to use a hoagie instead of a hot dog bun. I would also suggest a really tasty hot sauce for the mayo spread, makes a delicious po' boy!

Entire family loved this recipe and can't wait till I make it again. It was also quite easy which is great when you want to get out of the kitchen.

For this one meal, forget the calories and simply enjoy. Make as instructed and you'll love this sandwich.

I'm going to make this for the 4th looks delicious. If you have calorie/ health concerns you could easily change the mayo to greek yogurt, whole wheat crumbs or panko or gound nuts or a mixture with corn meal also, whole wheat buns, bake instead of pan fry....all would help. I actually automatically do that to all mly recipes.

Is it possible for someone to actually give a review for a recipe?? Who cares about the calorie count!! Rule of thumb; if it's fried and mayo is involved.....there's going to be calories! DAH!

What is the calorie count? I'm surprised with all the emphasis on diet and food why only about half of the recipes published give calories. My husband and I stick to 1500-2000 calories a day. I pass up any recipe that doesn?

How about no bun and set the scallops on top of a spinach salad and pour the dressing over tne top!
