Coffin Cake Variation
You can also make one large coffin cake that serves 10 to 12 by doubling all the ingredients and baking in a 9-by-13-inch baking pan instead. Follow steps 1 through 3, then using our super-sized coffin template, cut cake into a 7-by-12-inch coffin shape. Using the same template, cut marzipan into coffin shape. Gently press marzipan on top of cake. To finish, pipe small dots around edges of marzipan on cake with royal icing. Apply fleur-de-lis with a small offset spatula, securing with royal icing.
