I've made this many times, sometimes with thyme and sometimes with dried oregano. Both versions taste good. It's a simple recipe and a great side dish.

Possibly the most often used recipe for plum tomatoes in my kitchen. I serve them with roasted garlic over spaghetti and a dollop of pesto. My husband cheers, my often picky kids swoon and we all sit down to a fabulous dinner. I have been known to add fresh basil, toasted pine nuts and grated Parmesan as well. Thanks, Martha. Such a simple and easy side dish, but so delicious! I used dried oregano instead of thyme and the tomatoes tasted wonderful.
