Spook kids and adults alike with these devilishly delicious chocolate cupcakes that are made with Dutch-processed cocoa powder. Decorate them like a very scary monster...if you dare.

Ingredients

  • 1 ½ cups all-purpose flour

  • ¾ cup unsweetened Dutch-process cocoa powder

  • 1 ½ cups sugar

  • 1 ½ teaspoons baking soda

  • ¾ teaspoon baking powder

  • ¾ teaspoon salt

  • 2 large eggs

  • ¾ cup warm water

  • ¾ cup buttermilk

  • 3 tablespoons vegetable oil, such as safflower

  • 1 tablespoon pure vanilla extract

Directions

  1. Preheat oven to 350 degrees. Line 2 standard muffin tins with paper liners. Whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt in a medium bowl.

  2. Mix in eggs, water, buttermilk, oil, and vanilla until smooth, about 3 minutes. Divide batter evenly among prepared muffin tins. Bake, rotating tins halfway through, until tops spring back when lightly touched, about 20 minutes. Let cool in tins on wire racks.
