LOVE, LOVE, LOVE this recipe. It's become the family favorite at Thanksgiving and the most requested dish, especially from our teenagers! It takes a lot of preparation and care, but it's well worth the effort!

Does anybody know why you would put the breast and thighs in at the same time and then let the breast sit for a full hour while the the thighs finish cooking? What is the purpose of this? Why not start with thighs and add breast in last 45-60 minutes of cooking time??
