Cook's Notes

To prepare brussels sprouts, leave outer leaves intact and trim stem end flush with base of sprout. Remove any discolored outer leaves. Score by cutting an X into stem end; this allows for even cooking.

This is one of my favorite salmon recipes. I never knew how delicious the brussel sprouts will taste when you roast them. I frequently prepare this meal.

I love Brussels sprouts almost any way. My husband, on the other hand, hated them until this recipe. I made them with Tuna steaks. Even my cat likes them. I thought it was the fish juice in them, but, she will move heaven and earth when she smells Brussels sprouts

I agree with FoodieWife, I never liked brussels sprouts until I started roasting them. I also like to finish them off with a sprinkle of freshly grated asiago cheese or even an aged gouda grated over them. Also a little fresh lime juice is a great kicker. :) This was a great simple but delicious meal.

I do not like brussel sprouts...at least, until I roasted them with this recipe. I actually liked them! The salmon filets are easy, but I still prefer to sear mine and then roast them in the pan-- I just love a crisp crust to the salmon. I'll make this again, as my husband loves brussel sprouts.
