  • Cook orzo according to package directions. Melt butter in a medium saucepan over medium heat. Add shallot and lemon zest, and saute until translucent.

  • Add peas, and cook until bright green and tender, adding a little water if shallots brown before peas are tender.

  • Add cooked orzo, season with salt and pepper, and toss to combine. Remove from heat, and stir in mint.

I made this exactly as written, except for addition of some feta at the end. This was utterly delicious, just the right amount mint and lemon flavors. I will definitely make this again.

this dish was incredible! i added PLENTY of mint (i love it) and it added a wonderful sharp flavour. went well with goat cheese or parmesan cheese on top and a side of steamed carrots!
