  • Preheat oven to 475 degrees. In a large pot of boiling salted water, cook macaroni 6 minutes (it will be undercooked). Drain. Meanwhile, heat a small skillet over medium and add bacon. Cook until fat is rendered and bacon is crisp, about 10 minutes. Add garlic and cook until fragrant, 30 seconds. With a slotted spoon, transfer bacon mixture to a medium bowl. Add macaroni and stir to combine.

  • In a large bowl, whisk together eggs and evaporated milk. Add 1/2 teaspoon salt, cayenne, nutmeg, and cheeses; mix well. Add macaroni mixture and stir well to combine. Transfer to an 8- or 9-inch square baking dish or 2-quart gratin dish. With a spoon, gently spread mixture to form an even layer. Bake just until sauce is bubbling at edges, 12 minutes. Let rest 10 minutes before serving.

I made this recipe this afternoon for the first time. Altho Emeril made this with his children (for Everyday Food), this recipe is spicy with a nice garlic flavor which may not appeal to all kids. Be sure to use only 1/2 pound macaroni. I used 3 cups and it was a 1/2 cup to 1 cup too much. I may increase the cheese next time or swap out the monterey jack for gouda but overall the eggs and the evaporated milk made a nice bechamel. Sauteing the minced garlic in the bacon fat is brilliant!

This is, by far, my favorite mac and cheese recipe. Friends and family love it too. Love the hint of nutmeg and cayenne. I have also swapped gouda for the monterey. I've noticed, with any mac and cheese, using quality ingredients also makes a difference.

This is such a yummy dish! I can't see why it had bad reviews, I put extra cheese and bacon. Dont cook any more than 10-12 min. or it is too dry.

This recipe is great. I have made it several times and love it. People who don't like it probably like a more "kraft-like" mac and cheese. This has a rich flavor and a little spice bite.

Disgusting......I had 3 different boys ages 11, 12 and 13 try this recipe and all 3 spit it out! I am not a picky eater myself and found this recipe to be just plain awful!!!

I loved this mac and cheese and so did my fussy husband. It came out dry once, but I left it in the oven too long. Even a friend who makes her own mac and cheese liked this dish. I left out the cayanne - can't eat spicy - and the bacon if I didn't have any, still good. Have made it several times. Great recipe.

Not sure why the other ladies hated this recipe. My family regularly requests it. The bacon is what makes it so good. I only add a small amount of cayenne, but other than adding a bit more bacon that it calls for, I follow this recipe completely. I have NEVER found the consistency dry, or tasting like cardboard, as mlangpop reported. Perhaps they are not following the recipe properly. We recently added this dish to our Thanksgiving meal, as our extended family embraced it, as well. Try it!!!

This recipe was horrible! Maybe it was because I omitted the bacon (didn't have any), but not sure that was it. It had a gross consistency (lumpy/runny at the same time!) and weird flavor. I didn't like it and my daughter (2 yrs old) spit it out on her plate. I would skip this. There is another recipe that Martha has, I think it's a 5-cheese recipe, that is amazing. The extra time is well worth it. Skip this one!

this was the worst mac and cheese I've ever tasted!!!!! Mac and cheese in a box at the grocery store tastes better. this was dry, dense, and tasted like cardboard. Save your money and time, never make this recipe. I'm off Emeril's ideas, he has lost it completely. yuck
