Quick Broiled Shrimp with Tomato and Feta

Use the extra shrimp, tomato sauce, and feta from Tomato and Shrimp Pasta with Feta to make this delicious and quick lunch.

Ingredients

  • ¾ pound large shrimp, peeled and deveined

  • cup tomato sauce

  • 4 ounces crumbled feta cheese

  • Crusty bread, for serving

  • Green salad, for serving

Directions

  1. Heat broiler, with rack 4 inches from heat. Divide shrimp among four 8-ounce ramekins or place in a 2-quart baking dish. Top with tomato sauce and feta. Broil until shrimp are opaque throughout and feta is golden brown, about 8 minutes. Serve with crusty bread and a green salad.
