Fresh, sweet bell peppers are a nice foil for the richness of the sunny yellow yolks. We lightened up the usual egg-in-a-hole by using bell peppers in place of the fried bread slices and serving the eggs on multigrain toast.
All in all a wonderful and simple dish! I believe after making it as directed it could be elevated to spectacular by adding all or even one of the following. I think I would lightly butter the toast, add a garnish of pickled onions on top and possibly a smear of mashed avocado on the toast before placing the egg.
