I agree, instructions made it much more complicated than necessary. Could simply saute the leeks wthile the bread cubes are toasting, then layer everything to absorb the custard, and then bake.

This is very good.....a wonderful flavorful accompanyment to our braised short ribs and impressive for guests. The directions were so exacting, however some of the layering, etc could be skipped. Next time I will halve the recipe as well.
