Cook's Notes

Many recipes use only beef, but you can add veal and pork for a more tender loaf. Use an ample amount of breadcrumbs to prevent it from becoming too dense. Add finely chopped vegetables to lighten the texture and add flavor; try a combination of garlic, onions, carrots, celery, and parsley. Many recipes also call for ketchup, which lends a sweet and tangy taste to the finished meatloaf.

    Thanks Martha. Same as you...keeping mom in thoughts and feelings. This recipe...made 1st time exactly. To me and my hubbie...too dry. Made second time w equal pork and veal. (per your site note). Moist and great for leftover sandwiches the nest day. Martha...sincere appreciation.

    Best meatloaf E.V.E.R. My son loves it, my friends' and their kids request for it all the time. Flavourful, chockful of vegetables, easy, moist....what's there not to like. Thank you.

    This is the best meatloaf ever! I have a friend who knicknamed it "Meat Candy" due to the wonderful glaze that carmelizes on the top edges. It is so good I always make 2 - heating the oven afterall there is room for 2- the second one is used in the best meatloaf sandwiches- don't change a thing it is perfect as is.

    I love this recipe! I usually make it with italian bread crumbs and then cut back on the salt. I also use very low fat meat because adding all those veggies allow the meatloaf to stay super moist.

    I love this recipe. The only thing I would change is the salt. I would cut back on it. Otherwise yum, it is good.

    Great recipe!!! I first tried it with all beef and then decided to try it with 1/2 minced chicken and 1/2 minced turkey for a healthier version came out tender and yummy!!!!!!!!!!!!!!!!!!!!!!

    Great recipe! Making in smaller pans and freezing great for those nights I want a quick meal! My father-in-law who is 89 and lives on his own loves when I bring him his own meatloaf. Great comfort food!
