  • Heat grill to medium-high; clean and lightly oil hot grates. Generously season steak with salt and pepper.

So many recipes for meat dishes contain; "(a thermometer inserted horizontally into center of meat ---)". Don't!! A thermometer inserted horizontally into center of meat allows juices to run out. Learn to trust your eyes and feel for the tenderest and juiciest cooked meats.
