  • Heat broiler, with rack set 4 inches from heat. Place salmon on a rimmed baking sheet; season with salt and pepper. Broil until opaque throughout, 5 to 7 minutes.

  • Meanwhile, in a large skillet, heat oil over medium. Add as much spinach as will fit; season with salt and pepper. Cook, tossing spinach and adding more to skillet as space becomes available, until tender, about 2 minutes. Remove from heat; drain off excess liquid. Stir in feta, pine nuts, and lemon juice. Serve salmon with spinach saute.

After you gather all your ingredients.... quick@easy...especially after a long day @ work...I added hulled sunflower seeds to spinach... will work with artichoke@kale next time...JFM

Starting to eat healthy has never been so easy! Just tried this recipe with the whole family. There have been ups and downs to getting the kids to try healthier options but everyone loved this salmon and feta. Now I'll be on the lookout for more recipes with yummy veggies!

I have made this twice just like the recipe said and it was wonderful. Good enough for company. The spinache/pine nuts/feta is great. I greated a little lemon peel over it. I'll be making it again.

I broiled & seasoned the salmon exactly as the recipe said and they turned out nicely! However, for the sauté I enhanced it a bit by adding sliced mushrooms & chopped onion springled with seasoned garlic & parsley and since I didnt have pine nuts handy, I tossed in sliced walnut & a squeeze of lemon juice. I also served with a side of couscous for a complete meal - and my husband loved this dish!

I love spinach....add a clove of garlic to the Tablespoon of oil (along with the pine nuts or walnuts, pecans, pistachio's...nuts you love) prior to sauteeing the spinach....if you don't like feta, use something else....shavings of parmesan or goat cheese, and the lemon juice is great but you can also use vinegar (start with 1 teaspoon and adjust to taste).....

My husband and I both LOVE this dish! I did not add a thing to the ingredients. It is so easy and yet, tastes like a dish at a wonderful restaurant. It has definitely been added to our "go to's" for dinner. We've also sent it to many family members. Thanks for a great and easy dish!

I added smoked paprika and a bit of basil to the salmon to give it a bit more flavor and it turned out great. The spinach saute, eh, not so much. I didn't like it at all. My husband said it was okay, but seemed to be missing something.

My husband loves this dish. It has become one of my favorites as well.. I agree toasting the pine nuts first just adds flavor to the dish. We like it so much that I am making it for dinner tonight.

I just saw them make this last Saturday and had a heck of a time finding the recipe on your sight - which should have been my first clue. My husband the food critic said "it's a good diet meal because nobody wanted seconds". I thought it was better than that. Maybe it's a better fit for a ladies luncheon. It was really fast and easy to make - which was great. Unfortunately, I work full-time and don't have ladies for lunch, so I probably won't make it again.

Great taste in such a short time. It is incredibly easy, fast and nutritious. Like the idea of toasting the pine nuts first, will try this next time. Another plus is that one just needs a few ingredients on hand to pull this off. Terrific dish, will definitely make again. Would also be ideal for a last minute dinner for guests.

This is so easy, incredibly fast, and the results are delicious. I toasted the pine nuts first in the skillet I was warming to saute the spinach. An added bonus--only two pans to clean up!
