Simple Steamed Spinach

This simple side dish works well alongside our Radicchio and Mushroom Roulade.

Ingredients

  • 1 pound fresh spinach, stems removed, rinsed well but not dried

  • 2 teaspoons extra-virgin olive oil

  • Coarse salt and freshly ground pepper

Directions

  1. Place spinach in a large pot. Cover tightly,and cook over high heat until spinach begins to wilt, about 2 minutes. Toss with oil, season with salt and pepper.
