  • Preheat oven to 375 degrees. Toss cauliflower, garlic, ginger, salt, and oil on a rimmed baking sheet; season with pepper. Roast cauliflower until browned and tender, about 30 minutes. Toss with mint and lime juice. Serve immediately, or refrigerate, airtight, up to 3 days.

Cauliflower is one of those boring vegetables in my home, but we had some (for some strange reason) and I didn't want it to go to waste. This recipe was delicious and unexpectedly flavorful. Must eat it right when it comes out of the oven. My husband and I have decided to start buying cauliflower more frequently now and try this recipe with salmon or grill pork chops. We didn't make any changes to this recipe.
