Awesome recipe! Didn't have tortellini on hand so used angel hair pasta instead. Served it with chicken and Greek salad. Husband loved it so this is definitely a keeper for me!

Why is every recipe under 5 stars....not saying all should be 5 stars but it just seems too many picky eaters out there or wanna-be gourmands. You make the recipe as is and see how it goes for your tastes (you wouldn't try it if it hadn't sounded good). Do your thing but let me discover myself...I always mess with recipes. You don't like fine but don't change recipe and complain. Just venting as a chef would I'm sure.

This was delicious! I made a few changes, I used vegetable stock instead of water, doubled the amount of garlic and used basil instead of parsley & it was amazing! It didn't feed that many people, but that could have been because everybody liked it so much! When I made it a second time, I doubled the recipe and used half shiitake and half button mushrooms since they are less expensive and I had some on hand and it was good too, not quite as rich and delicious as all shiitake though...

This was delicious! I drained the excess liquid prior to adding to the tortellini, but otherwise I made it as written. Very good dish!

Calorie count is only about 765. I think the previous poster probably made an error on the shitakes. One web site shows a half a cup having 290 calories which is incorrect. There are only 87 calories in 8 ounces of shitakes.

substitute dried morels and save the rehydrating water for sauce; add basil and substitute heavy cream for the butter and this is amazing. I think next time I would make it a little thicker (I like a 'sticky sauce) but this would be an easy, fancy-looking dish for company when scaled up

Thanks for including a recipe for just one person. It is always easier to increase a recipe for more people than to reduce it down for one. Less leftovers in my freezer is always nice....Ginger G

Delicious! I found that the eight ounces of mushrooms were enough to make sauce for two people, so I just had to increase the amount of tortellini to cover us both. My sweetheart and I really enjoyed it. By the way, the unusual one serving recipe is part of a regular feature in the Everyday Food magazine called Cooking For One- I think it's a nice feature since almost all recipes are designed for families of four even though not all households consist of four people.

Excellent meal - just made portion adjustments for my family - delicious and easy - nice to sometimes have a non-meat meal.

This recipe was a big hit with my husband. I made it with a Buitoni family size pack of tortellini (20 oz.), and just upped the sauce ingredients a bit (not sure why the serving size was set for 1 person...kinda weird). Also, the shiitake mushrooms weren't looking so fresh at the grocery store that day, so I ended up substituting portebellos instead, which worked out great!
