    The best soup! It's great when you're dieting because it's a bit sweet and takes away my need for dessert. I've never juiced my own carrots, I just buy bottled carrot juice. The freshness of the carrots does affect the overall flavor though. Also, make sure you use low fat coconut milk otherwise you'll get "flakes" of white coconut fat you won't be able to get rid of.
