roasted garlic

Packed with cancer-fighting, inflammation-reducing compounds, garlic earns a place on the list of World's Healthiest Foods. Roasting mellows its pungent flavor, softens its texture, and offers an easy way to reap garlic's nutritional rewards. Elevate otherwise mundane dishes such as pizza and pasta with its earthy, spicy flavor. It's also delicious spread like butter on fresh bread as a simple yet elegant hors d'oeuvre.

To Prepare

Take a whole bulb of garlic and remove the outermost papery layers. Cut off the top of the bulb, exposing the individual cloves. Drizzle with olive oil, wrap in parchment paper (or aluminum foil), and bake at 400 degrees until soft, about 1 hour. Cool slightly before using or serving.
