One of the best parts of summer is the abundance of juicy berries—think blueberries, strawberries, raspberries, and blackberries—and stone fruits like peaches, plums, nectarines, and apricots. While these fruits are delicious eaten out of hand fresh from an orchard or farmers' market, they're even more spectacular when tossed with sugar, lemon juice, and a little cornstarch and baked between two layers of flaky pie crust.
