Martha and her mother make three kinds of cookies: Bull's Eye Cookies, a playful formation of simple black and white dough; Orange Poppy Seed Spirals, made from a rich, almond-based sable flavored with plenty of orange zest; and Neapolitan Cookies, which consist of layers of orange-sable and chocolate-espresso dough mixed with dried cranberries.

Simply form the dough into logs or bricks, wrap them in parchment, add a label with the date, and store in the freezer for up to 3 months. Or, store them in the refrigerator for up to 10 days. Making the dough and assembling the logs will take you an afternoon. When you're ready, just slice the cookies off the chilled logs, and bake.
