Hot Potatoes

Here's the best way to keep mashed potatoes warm (or to reheat leftovers) without ruining their fluffy texture. Place potatoes in a heatproof bowl over a pot filled with three inches of barely simmering water (or use a double boiler). Cover with a lid or foil to trap the steam. Potatoes will stay warm for up to two hours.
