Most recipes call for only a small portion of tomato paste -- you use a tablespoon or two, and the rest invariably goes to waste. To save the remainder: Carefully open both ends of the can with a can opener. Remove one metal end, and discard it. Leave the other in place. Wrap the entire can in plastic wrap, and freeze overnight. The next day, use the metal end to push the frozen paste out the open end. Discard can, tightly rewrap unused portion, and store in freezer up to 3 months, slicing off just as much as you need each time you cook.

I transfert the leftover tomato past in plastic or glass container, and cover with oïl. Last for weeks. When needed, Spoon out the quantity you néed. Just make sure that the paste remains under oil. The oïl préservés the paste.

that's so clever! I never would have thought of freezing the tomato paste like that. To be honest, I never have left over tomato paste, because I love to eat the leftovers with a spoon, just like some people do with peanut butter. I'm sure going to let others know about this though. Tomatoes are my favorite.

I just buy Tomato Paste in a Tube. Is so much easier to just squeeze out what you need when you need it.

I would never use plastic wrap directly on my food. Especially in the freezer.

Thanks a lot Martha. I am always using tomato paste and left wondering what to do with the leftovers thinking Ill use up the rest later then having to throw it out. this will come in handy. Thank you so much. you are a very talented woman. Keep bringing all your great Idea's to the table...

I would use an ice cube tray that makes the size of about 1 tablespoon cubes.... and after they have frozen, pop them out and freeze in a seal a meal type of bag to prevent freezer burn.

How many Tablespoons in a small can? How many equal slices so I know I have tablespoon measures?

I do exactly what another commenter said about portioning out tablespoon portions, freeze solid and store in freezer bags. You can wrap each ball in wax or parchment but even if they stick together they release quite easily

Slicing the frozen tomato paste is a good idea too. After opening a can, I use a small cookie dough scoop (like an ice cream scoop) to make tiny scoops of it (approx 1 T) and place them onto a little tray to freeze. Next day I slide the T P balls into a zip lock snack bag back into the freezer for other recipes.
