Fresh parsley is a classic garnish, but its natural moisture causes it to clump together when chopped. Try this restaurant trick for drying it: Place washed and finely chopped parsley in the center of a clean kitchen towel. Draw up corners, and wring out completely. Unwrap. Sprinkle the colorful green flakes onto a main dish, or add them to salad dressing or herbed butter.
